Tofu Frittata Cups


I made these awhile ago and thought they came out awesome.  
Super easy to take with us for a quick breakfast on vacation.

FRITTATA CUPS:
1 lb. Extra Firm Tofu (drained well)
3-4 T. Nutritional Yeast
1 T. Mustard (honey or dijon - depending on your taste)
1 t. Garlic Powder
1 t. Onion Powder
1/2 t. Turmeric
1/2 t. Cumin
1/2 t. Himalayan Salt

Preheat oven to 325 degrees. 

In a large bowl, break up the drained tofu into little crumbly pieces.  Add the rest of the ingredients and mix well. 
Scoop into muffin cups. 
It will not expand so pack it in there as high as you want them.  Bake for 20 minutes.
