Apple Pie in a Mason Jar

MMM!!!  Apple pie with vanilla cream!
Apple Layers:
4 Apples - (We used 2 Pink Lady, 1 Granny Smith & 1 Fuji)
Chop up the apples in square pieces and blend them in the food processor until desired consistency is reached. I did it in 2 separate batches so it did not turn to mush.  (Sprinkle a bit of lemon juice on them while you are working with the other ingredients and if you will not be using them right away, so they do not start to turn brown).

Next blend the following in a food processor:

9 pitted Medjool dates, soaked for about 30 minutes
2 t. Vanilla Powder or Extract
1 t. Pumpkin Pie Spice
1 t. Cinnamon
2-4 T Agave depending on your taste.

Add to the minced apples and mix well.  Set aside.

Vanilla Cream Layers:

1-2 C Cashews Soaked for 6 hours
2 T Coconut oil - liquid
4 T Coconut butter - liquid
2 T Vanilla Powder or Extract
2 t Xanthum Gum (optional)
1-2 T Agave
1/4-1/2 C water from soaked cashews - as needed for consistency

Blend all ingredients in food processor until desired consistency


Layer the apples and cream into a mason jar or small glass and cool in the fridge until ready to serve.  Enjoy!!
