Sweet Potato Black Bean Quesadillas

These came out delicious!  I saw a similar dish on several websites, but most of them had butter (which is an easy sub) and some of them even had cheese (the nerve of some people).  So I made a Vegan version of it and the kiddos loved them.

Sweet Potato - Black Bean "Quesadillas"

2 Sweet Potatoes or Yams (peeled and steamed just enough to soften)
Mrs. Dash Tomato Basil Flavor - to taste (we used about 3 shakes)
3-4 Small Sun Dried Tomatoes
2-4 T. Coconut Oil
1 C. Non-dairy Milk (we used coconut milk)

Add all the above ingredients to a blender or food processor and mix well.

1 can of black beans
Tortillas
Lettuce

Preheat your oven to 350.  Spread the sweet potato mixture around a tortilla, leaving about 1-2 inches around the edge.  Add black beans, and add lettuce and then place another tortilla on the top.   Put your "quesadilla" on the top rack in your oven, and watch it curl up a bit on the edges.  Leave in for a few minutes and flip over.  Depending on how crispy you like your tortillas, leave in 3-5 minutes on each side or longer.    Cut into triangles.  We had enough to make at least 3 more quesadillas.  Enjoy!
