VEGAN French Toast Dippers

We saw a French Dipper recipe in Hearty Vegan Meals, and my son could not wait to try them out.  I was not about to fry these yummies, as the recipes calls for - so we just pan cooked them like regular french toast.  



I adapted the recipe just a tad, from the book.

Vegan French Toast Dippers

Ingredients:
1 C Whole Wheat Flour
2 T Coconut Sugar
1/4 t Cinnamon
1/8 t Pink Salt
1/2 t Baking Powder
1/2 t Vanilla Powder
1 C non-dairy milk

6-8 Slices of stale bread, sliced in stripes

Directions:

Combine all the dry ingredients, stir in the milk.  Dip your bread in the batter* and place in a heated pan, flipping twice.

*After dipping in the batter, I scraped a lot of it back into the bowl.  The batter is very thick, since the dippers are meant to be fried, but there was more than enough left on the bread even after taking a lot of it off.  

We used raisin, cinnamon wheat bread that was left in the cupboard for a few days to make it a bit more stale.  They were delicious even without the powdered sugar and real maple syrup we topped them with.  Enjoy!
