VEGAN Noodle Stroganoff


This is so delicious, you will want to make it more than once a week.  It is part of my Vegan CrockPot Meals, but was so popular over there and I got a lot of emails with questions about it, so I though it needed its own post.

NOODLE STROGANOFF

Ingredients:

1 32 oz Box of mushroom soup
1 cup chopped onion
1 T Worcestershire sauce*
1-2 C Veggie broth
8 oz button mushrooms
salt and pepper to taste

4 ounces tofutti cream cheese (in the yellow tub)
1 bag of Eggless Noodles of your choice.
Add all (except tofutti, and noodles) to crockpot and cook on low for 5-6 hours.   If the sauce is not thick enough, add about 1/4 c or so of cornstarch.
30 minutes before serving, add tofutti and stir to combine well.  
Cook your noodles.  This is what I use.


 I then add the noodles on top of the mushroom sauce and VERY lightly stir them in, just to get the flavors mixed in.   You don't want your noodles broken up and mushy.


I served it over a slice or two of bread.  Everyone had seconds or thirds.  It is so delicious!!

  1. Ahhhh you're killing me! XD This looks SO yummy that I'm mad I don't have the stuff on hand to make it for lunch. I think I'd use crimini mushrooms instead of button and I'd add seitan roast 'meatballs' (if I can make them work.) I never thought this recipe could be vegan let alone be made in the crockpot! Thank you so much for such awesome recipes!

    I have been a vegetarian for 9+ years now and two years of that I was vegan because I have a sensitivity to dairy, I'm allergic to honey, and semi frequently get really freaked out about eggs. One of the reasons I went back to being a vegetarian because I felt like I was spending the majority of my free time cooking and it was just daunting and expensive. Your recipes are making me excited to get back to eating a much more vegan diet. I still have my challenges ahead of me because my vegetarian husband is a cheese addict, but the recipes you have posted look so tempting that I have some dairy free choices that don't make me feel like I'm missing anything! <3

  3. Would this still work without the tofutti cream cheese? I don't have any.
