VEGAN Crock pot Spanish Rice


Yummy!  Crock pot Spanish Rice.  Easy and practically makes itself!


Crockpot Spanish Rice2 T oil
1/2 onion, chopped
1 1/2 cups uncooked rice
2 cups vegetable broth
1 cup chunky salsa
1/2 - 1 c water as needed.
A few dashes of Tabasco or other spices (optional)

Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.
Add onions to the crockpot.  (You can also just just use onion powder instead)
Add all ingredients to crockpot and stir gently.  Cook for 5-6 hrs until the rice is tender.

  1. 5-6 hours on high or low? How much onion powder would you use if you used that instead of the onion?
