VEGAN Molten Chocolate Cake





VEGAN Molten Chocolate Cake? Yes, it can be done!!  If you love chocolate, than this is the cake for you.


VEGAN Molten Lave Chocolate Cake


CAKE
1 ½ C Flour
¾ C Palm Sugar
½ t Salt
1 t Baking Soda
¼ C Cocoa/Cacao Powder
1 ½ t Vanilla
1/3 C Oil
1 T White Vinegar
1 C Water
--Combine flour, sugar, salt, soda, cocoa in bowl.  In separate bowl, combine vanilla, oil, vinegar and water.  Add wet to dry ingredients.  Do not overmix. 
Fill each baking dish with about a 1/3 of cake batter.  Add LAVA fudge to middle, being careful not to let it touch the edge of the dish.  Cover fudge completely with more cake batter.
Molten chocolate LAVA
½ Bag of Vegan Choc Chips
2 T Cornstarch or Arrowroot
¼ C. Almond Milk
-- Lightly butter/oil your baking dishes.  In a double boiler, wish all the LAVA ingredients over medium heat until it melts smooth.


  Preheat oven to 350F.    Bake for 15-20 minutes. 
Cool slightly and sprinkle with powdered sugar.  



  
Use a double boiler, or a glass dish inside of a pot of water.   Butter your baking dishes.  


Don't over mix the cake batter.


  
Fill 1/3 full and then add your LAVA fudge to middle.  Add MORE than I have pictured,
just don't let it touch the edges of your dish.




  
Fill to the top of your baking dishes with remaining batter, cover the fudge completely.


  
MMMM......almost ready to eat!!

  
I dumped mine onto a plate for photos, but you can just leave it in the dish.
YUMMY!!!!


It is sooo easy....now go make some!!

  2. Cindy, thanks. The photos don't do justice for the size comparison, sorry about that. These are just single serving cakes. I used regular ramekins.
