VEGAN / Vegetable Pot Pie



Looking for an easy VEGAN Pot Pie recipe? You have found it!  This could not get any easier if my mom made it for me.



Vegetable Pot Pie
1 C Vegetable broth
1 onion, chopped
½ box of mushrooms
3 potatoes, cubed
1 C carrots, cubed
1 can of corn
1 can of peas
Sauce - below
Biscuit Topping - below

Preheat oven to 450F.   Saute onions, then add potatoes, mushrooms, corn and carrots, and cook until heated through.  Add peas and toss to combine.  Pour into baking dish.   Use the same pot to make the sauce.  Pour sauce over the veggies.
Top with biscuit topping.   I took little balls of the biscuit dough and flatten the pieces in my hand and laid them over the veggies until covered completely.  Bake for 45 - 60 minutes until biscuit has browned.

Sauce
1 ¼ C water½ C Flour¼ C Oil
salt, garlic powder to taste
Whisk together in sauce pan until smooth.



Biscuit Topping
2 C Flour
3 t baking powder
1 t salt
4 T butter, melted
¾ C water
Combine dry ingredients.  Add melted butter and water until it is a pliable ball, but still a bit sticky.

We found this awesome potato cutter device at Wal-mart. 
It makes cutting 
the potatoes so easy.
We used it to dice the carrots to - easy peasy!!



 


 
Bake for 45 - 60 minutes until biscuit has browned.

We had some leftover bisquit topping, so we cut up some apples
and put the leftover bisquit on top with some agave and baked them.  YUM!!
