Black Bean & Sweet PotatoTacos
I have been trying so hard to stick to a grocery budget since it seems like we are running to the store every other day when the little chef wants to make something. He has made some type of cookie every day for the last week. He grabs my iPad and starts surfing google for the best one out there and soon enough I am stuffing my face with his goodies. We have gone through several bunches of bananas, 3 jars of applesauce and 2 bags of coconut sugar, to say the least.
So I told my kiddos that there are no more store runs for a while, we must use what is in the house first. Therefore, last night we came up with black bean & sweet potato tacos. They were delicious. They were pretty simple, but I will list the ingredients anyway for those of you that like to have it to refer back to.
Black Bean Sweet Potato Tacos
1/2 Onion, chopped
1/2 Red or Green Pepper, chopped
Fresh Cilantro, as much as desired
1 - 2 T. Taco Seasoning
1 can of Black Beans, drained
1 sweet potato, steamed
Tortillas of your choice
Toppings of your choice
Saute the onion and pepper in some olive or sunflower oil. Add some cilantro and taco seasoning. You can toss in the bean if you like, but we kept them separated. Mash up your sweet potato and the beans together, or leave some of the beans out and top the bean mixture with them. Then layer your tortilla with the black bean mixture, lettuce, tomato, salsa as desired.
