VEGAN Enchilada Pizza




Craving pizza, but no pizza sauce in your cupboard?  Looking for a quick and easy dinner?
How about a twist on an old favorite?
Enchilada pizzas can be made with whatever you have in your fridge or pantry in just about no time at all.  

Enchilada Pizza
1 Can Refried Black Beans - or whatever you have on hand
1 Can Enchilada sauce (or make your own, recipe below)
Toppings of your choice.
Tortilla, wrap or flatbread, or whatever you have on hand

Preheat your oven to 450F.  Place your tortilla in the oven on the rack for about 3-5 minutes to harden it slightly.  Remove and add your toppings.  Return to oven for about 5 more minutes or once it looks heated through.  Enjoy!!!

What will you put on yours?

Enchilada Sauce
3 T Vegan butter
3 T Flour
2 T Chili Powder
1/4 t Garlic Powder
8oz Tomato Paste
1-2 C Water (for desired consistency)

Combine first 4 items in a sauce pan on medium heat and then add tomato paste, mix well.  Add water until you reach the consistency you like.  Heat for about 5 minutes, serve.
