Vegan Pumpkin Mousse


Super good - super easy!!  Enough said...Leave a comment if you love it too!

VEGAN Pumpkin Mousse
1 14oz can of Pumpkin Puree
1/3 C Coconut Milk
1/4 C Coconut Butter or Coconut Oil
1 T Agave
2 t Vanilla
2 t Pumpkin Spice

Add ingredients to a blender and blend until smooth.




Pour into serving bowls and enjoy or chill until ready to serve.

So I tried this with the canned coconut milk, not the carton of refrigerated "drinking coconut milk beverage" (which is a way different product) and after it was chilled, with all the coconut oil and milk, it was almost a solid brick. Very solid, not mousse-like at all, and way too rich - almost like eating butter. I think I'll try it with the coconut milk beverage product next time, and not chill so long. Tasted DELICIOUS though!
