Vegan Soda Cake

Yes, soda in a cake.  Easy...fast and this time I used my own cake mix, but you can use a box cake mix if you prefer.  All you need is cake mix and soda.  I made a similar dessert recently with a white cake mix and they turned out like gooey blond brownies when I used an Izze Soda.  You can see the recipe here.  This one turned out just like cake when I used Club Soda.  I used a large pan, because I wanted them to be thin since we have been going through a lot of desserts lately and they don't last.

VEGAN Soda Cake

Cake Mix:

1 1/2 C. Flour  ( I removed 3T of the flour and added 3 T. Cacao powder to make it chocolate cake)

1/2 C. of Sugar

1 t. baking soda

1 t. baking powder

Combine all the ingredients above.  I usually add a sprinkling of instant coffee, just to bring out the chocolate flavor, but it is not necessary.  Once all the dry ingredients are mixed up, then add 10 oz. (about 1 1/4 C.) of club soda or any other soda of your choice.  Mix well.

Pour into a greased pan and bake for 20 minutes at 350F.  I used a 9x13 to get my thin cake, but if you want a taller cake, use an 8X8 pan and adjust your time a bit.
